Our Favorite Walleye Recipes

Spicy Mustard Walleye Recipe

Preheat oven to 450’.         

Rinse fillets with cold water and using a paper towel pat dry.         

Place fillets in baking dish. Lightly season with salt & pepper. (You can also add any of your favorite spices)         

On top side only, generously cover with Spicy Mustard or Dijon Mustard.         

Cover with grated block Parmesan cheese. (Or any shredded cheese will work)        

Bake uncovered on center rack for 12-15 minutes until cheese is bubbling.        

 Enjoy!

Walleye Fish Tacos

In a pan over medium heat melt butter and season to taste with salt, pepper, cumin, and chipotle seasoning. (Or substitute your favorite Mexican seasonings)

 Pat fillets dry and place in pan, sear one side, and flip.

Generously squeeze fresh lime over fish. Gradually break fillets apart until the desired size for your tacos.

 Fillets turn opaque when done.

Serve with your favorite taco shells, sides and cheese. (For an extra zest include pineapple)

Walleye with Creamy Creole Seasoning

 Ingredients:
4 walleye fillets
1 tablespoon olive oil
1 teaspoon creole seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup unsalted butter
1 small onion chopped
1 bell pepper chopped
2 cloves garlic minced
1/2 cup heavy cream
1/4 cup chicken broth
1 tablespoon lemon juice
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Fresh parsley for garnish

Instructions:
Season the Fillets: Rub the walleye fillets on both sides with the creole seasoning, salt, and black pepper.

Cook the Fish: Heat olive oil in a large skillet over medium heat. Cook the walleye fillets for 3-4 minutes per side, or until fully cooked. Remove from skillet and set aside.

Sauté Vegetables: In the same skillet, melt the butter. Add chopped onion, bell pepper, and minced garlic. Saute for about 5 minutes, until the vegetables are softened.

Prepare the Sauce: Stir in heavy cream, chicken broth, lemon juice, paprika, and cayenne pepper. Mix well and let simmer for3-4 minutes, until the sauce thickens.

Combine: Return the walleye to the skillet, spooning the creamy sauce over the fillets.
Simmer for an additional 2-3 minutes to warm through.

Serve: Garnish with fresh parsley and enjoy!


Walleye Olympia

 

Ingredients:

  • 1.5 lb. walleye fillets cut into 6-ounce pieces
  • 1 white or yellow onion (sliced or julienne cut)
  • 1 tbsp. butter
  • 1/2 cup mayonnaise
  • 1/2 tbsp. Dijon mustard
  • 1/2 cup sour cream
  • 1 tsp. dill weed
  • 1/2 tsp. lemon juice
  • 1/2 tsp. Worcestershire sauce
  • 1/4 tsp. Tabasco
  • Salt & pepper to taste
  • 1 cup Japanese breadcrumbs (Panko)
  • 1/4 cup shredded parmesan
  • 1 tsp. chopped parsley
  • 1/4 tsp. paprika
  • 1/4 cup melted butter


Recipe Directions:

  1. Over medium heat, heat 1 tablespoon of butter in a large saucepan. Cook and stir onions until brown or caramelized, about 6- to 8 minutes. Let cool.
  2. Mix mayonnaise, mustard, dill weed, sour cream, lemon juice, Worcestershire sauce, and Tabasco sauce. Add salt & pepper to taste.  Set aside.
  3. Mix breadcrumbs, shredded parmesan, chopped parsley, paprika and melted butter. Set aside.
  4. Layer caramelized onions on a baking dish pan. 
  5. Place cut walleye fillets on top of onions. Coat with mayonnaise mix, then sprinkle on bread-crumb mix.
  6. Bake at 350 degrees for 10- to 12 minutes or until meat is flaky.
